I grew up in a house where my mom made us dinner every night. It was always a lean meat (turkey or chicken), a steamed vegetable or salad and a starch. Looking back I realize now how spoiled we were. We all know how hard it is to got to work, workout, take care of our families and get dinner on the table but I always feel better when I know that I was able to give my family a good meal.
That’s why today I’d like to introduce you to one of my family’s favorite meals. I will warn you, it does take a little time to prepare (about 30 min) but it satisifies my criteria: 1. Healthy, 2. Heats up well, 3. Favorite of everyone.
This is the first time I’ve provided a recipe so bear with me. I managed to take a few pictures during the prep work but then got so excited to eat it, that I forgot to take a picture of the finished product. Then I took it for lunch yesterday and today so now it’s gone! I promise it looks amazing done! Just make it and you’ll see.
I usually make this on Sunday nights so we can eat it all week. Yeah, it makes that much.

- Coarse salt and pepper
- 2 garlic cloves, minced
- 1/2 cup fresh chopped parsley
- 8 oz orecchiette pasta
- 3/4 -1 lb Ground Turkey Breast
- 1 large egg
- 2 Tablespoon butter (I like to use real butter not margarine, it’s better for you)
- 1/2 pint bocconcini (Fresh Mozzarella)
- 1/4 cup italian breadcrumbs
- 1/4 cup grated Parmesan Cheese
- 1 pint grape tomatoes, halved
